Crispy Rice Salad

2 cups cooked white rice (day-old works best)
2 tbsp chili crisp
1 tbsp soy sauce
1 lb shrimp, peeled & deveined, seasoned & cooked
1 avocado, diced
½ cup edamame, shelled
½ cucumber, diced
Green onions, sliced
Dressing: 3 tbsp peanut butter or tahini, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp honey, splash of water to thin

Preheat oven to 400°F. Mix cooked rice with chili crisp and soy sauce until evenly coated.
Spread rice in a thin, even layer on a parchment-lined baking sheet. Bake 25–30 min, stirring halfway, until golden and crispy. Let cool slightly.
Whisk together all dressing ingredients until smooth. Add water to reach a pourable consistency.
Build the bowl: add avocado, edamame, cucumber, and cooked shrimp.
Top with crispy rice, drizzle dressing generously over everything, and finish with sliced green onions.
