Ingredients (no measurements)
low-carb flatbreads or pitas
blended cottage cheese (ricotta-style) + crumbled feta
cooked chicken breast (optional)
romaine lettuce
cherry tomatoes
cucumber
red onion
Kalamata olives
olive oil · lemon · oregano · salt · pepper
How to Make it
Blend cottage cheese until smooth and mix with feta. Toss the salad with olive oil, lemon, oregano, salt, and pepper. Warm the flatbreads, spread the cottage-cheese mix, top with the salad and chicken if using, fold and eat.
