Double Chocolate Banana Bread

4 medium overly ripe bananas mashed (about 1 1/4 cup mashed)
1/4 cup melted coconut oil
1/2 cup honey or granulated sugar
2 eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup chopped chocolate chunks/chunks, plus more for topping
Instrucciones
1. Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.2. In a large bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla. Add the flour, cocoa powder, baking soda, and salt, mixing until just combined. Fold in the chocolate.3. Pour the batter into the prepared pan. Bake for 50–55 minutes, or until the center is just set. Remove from the oven. Top with extra chocolate chunks (if desired). Let set for 1 hour. Slice and enjoy.
