2 1/2 cups all purpose flour
4 ounces room temp lard
2 1/2 teaspoons fine sea salt
2/3 cup water
Instrucciones
Mix flour, salt, and lard with your hands until it’s crumbly.
Add half the water, work in.
Add half the remaining water, work in.
Add the rest of the water.
Dump 1/4 cup flour on counter
Knead the dough on the counter for 4-5 minutes.
Grease hands with lard and coat the ball of dough with it.
Place dough ball back into bowl and cover. Put bowl in a warm place for 15 minutes.
Ball the dough. For small tortillas, 35-40 grams. For larger tortillas, 65-70 grams.
Place balls on cookie sheet and cover with another cookie sheet. Put in warm place for 5 minutes.
While they are resting, heat up your pan(s) to about 400 degrees.
Press tortillas into a bowl of flour, sprinkle excess flour onto counter.
Roll tortillas thin, until they are translucent. Cook on both sides.
Place hot tortillas in a cloth to keep them warm and moist.
