2 pounds Persian cucumbers

½ cup chopped fresh parsley leaves and tender stems
½ cup chopped fresh mint
2 pounds vine-ripe tomatoes
(6 medium), cored and chopped
1 medium red onion, diced
¼ cup freshly squeezed lemon juice
¼ cup extra-virgin olive oil
Kosher salt
Instrucciones
In a large bowl, toss the cucumbers, parsley, mint, tomatoes, onion, lemon juice, and olive oil to combine. Season with salt, then let sit for 10 minutes. Toss again to distribute the dressing, then serve immediately.
