Paprika Chicken & Chorizo Orzo

300g orzo
100g Parmesan
4 tbsp of pure
600g chicken
1 chorizo ring
2 red onions
2 tbsp smoked paprika
2 tbsp of oregano
2tsp garlic granules
2tsp chilli flakes
500 ml (maybe more as you go for orzo) chicken stock
100ml double cream to taste
Roasted red peppers
Spinach
Instrucciones
Chop chorizo into chunks and fry off in the background while you prep the rest of the dish. Set aside once crispy.
Cook chicken thighs in the same chorizo pan and their oils. Season as you go with salt pepper lots of smoked paprika and oregano. Set aside once done.
Dice your onion and fry off with another other vegetables. We used roasted red peppers at this stage too.
Add in your tomato pure and mix together.
Add in the remaining seasons of paprika, oregano, chilli flakes, garlic etc and fry and mix until the puree catches on the pan.
Then add your orzo and mixed together and lightly continue to stir for 1-2 mins in the pan.
Add in your chicken stock and cover until mostly absorbed.
Keep adding more water until the orzo is cooked through.
Drizzle through your cream and add a splash more water to accommodate your Parmesan.
Add in a few handfuls of spinach and mixed until wilted.
Add your chicken and chorizo back in once the Parmesan is melted through.
