Creamy prawn pasta

Ingredientes

700g raw prawns

1 packet linguine

3 tablespoons olive oil

3 punnets cherry tomatoes

1 red & 1 green chilli

3 shallots, finely diced

4 garlic cloves, finely diced

1 lemon, zest & juice

2 tablespoons fresh parsley + more to serve

2 tablespoons fresh basil

1/2 cup white wine

1/2 cup passata (optional)

1/4 cup cream (optional)

Instrucciones

Preheat oven to 180 degrees Celsius. Wash your cherry tomatoes and place in a roasting pan with your lemon zest, salt, pepper & a little olive oil. Place in the oven for 15 minutes.

In a large saucepan over medium heat, heat your olive oil. Then, sauté your shallots, garlic, chilli, parsley and basil until fragrant. Once softened, add in your prawns, cooking until they begin to turn transparent. Season well with salt and pepper and squeeze over your lemon juice.

Add in your white wine, letting the alcohol cook down for a few minutes and then add in your cherry tomatoes.

Now, add in your passata along with your cream and mix (this is optional but I love how creamy this makes the sauce!)

Cook your pasta according to al dente packet instructions and be sure to keep 1/3 cup pasta water.

Once your pasta is cooked, add it to your sauce with your pasta water and mix until everything is well combined. Top with fresh parsley to serve and ENJOY!
