Cottage Cheese Grilled Cheese Foldover Pockets — No Bread Me

Ingredientes

1 cup cottage cheese

2 large eggs

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

1/4 cup grated parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

Optional: chopped parsley or chives

Extra shredded mozzarella or cheddar for filling

Instrucciones

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. <

Add cottage cheese, eggs, garlic powder, onion powder, salt, and pepper to a blender. Blend until smooth.

Pour the mixture into a bowl and stir in mozzarella, cheddar, and parmesan.

Spoon the mixture onto the prepared baking sheet in thin oval or rectangle shapes.

Bake for 18–22 minutes, or until the edges are golden and the centers are firm.

Let the baked bases cool for 3–5 minutes so they can fold without breaking.

Add extra shredded cheese to one side of each piece, then fold over to create pockets.

Return to the oven for 5–7 minutes, until the inside cheese melts.

Let rest for 2 minutes, then serve warm with a dramatic cheese pull.
