Crispy Thai Rice Cucumber Salad

Ingredientes

-2 1/2 Cups cooked basmati rice (0.8 cups uncooked)

-2 Tbsp Thai red curry paste

- 1 Tbsp Oil

-3 Tsp light soy sauce or vegan fish sauce

Dressing:

-2 Tbsp light soy sauce or vegan fish sauce

-1 Chili

-2 cloves garlic

-juice of 1/2 lime

-2 Tbsp sugar

-1/4 cup (60ml) water

Else:

-a bunch of fresh mint and parsley/cilantro

-1 cucumber, smashed and chopped

-toasted coconut flakes and peanuts

-fried shallots

Instrucciones

Rice :

Bei 200C Heißluft 20-30min backen, aber nach der Hälfte umrühren.

Assemble everything in a bowl and combine with the dressing.

Serve in lettuce wraps.
