Spicy Sweet Potato & Halloumi Tray Bake

This one's got everything. Spiced sweet potato, crispy-edged halloumi, black beans, roasted red pepper and onion, then a lime yoghurt drizzle over the top with fresh coriander and chilli. The colours alone are worth making it for. And the halloumi going golden at the edges in the oven is genuinely one of the best textures in cooking.

Tray:
800g sweet potato, skin on, diced
225g halloumi, sliced into 1cm pieces
1 tin black beans (240g drained)
1 red onion, sliced
1 red pepper, sliced
1 tbsp olive oil
1½ tsp ground cumin
1 tsp smoked paprika
½ tsp chilli flakes (adjust to taste)
Salt & black pepper
Lime Yoghurt:
200g 0% Greek yoghurt
Juice of 1 lime
Zest of ½ lime
To Finish:
Fresh coriander, roughly chopped
1 fresh red chilli, thinly sliced
Lime wedges to serve
Instrucciones
Preheat oven to 200°C (fan 180°C). Toss diced sweet potato (skin on) with olive oil, cumin, smoked paprika, chilli flakes, salt and pepper. Spread in a single layer, don't overcrowd, you want proper colour. Roast for 20 minutes
Add red onion and red pepper, toss through. Back in for 10 minutes
Scatter the black beans across the tray and nestle the halloumi slices on top. Back in for a final 10–12 minutes until the halloumi is golden at the edges and the sweet potato has caught slightly
Mix yoghurt with lime juice, zest
Drizzle over the tray, scatter coriander and fresh red chilli, finish with lime wedges
