Broccoli and Three-cheese Savory Bake

7 oz broccoli florets
1 tsp oil, plus more for greasing
4 scallions, diced
3 tsp fresh dill, chopped
1¼ cups flour
1 tsp baking powder
1 tsp salt
1 cup milk
2 eggs, lightly beaten
1/4 cup olive oil
4 oz feta cheese, crumbled
4 oz mozzarella cheese, shredded
3 tbsp grated Pecorino cheese
Instrucciones
Preheat Oven to 375°F and lightly grease a 9x9 inch baking dish with olive oil.
Bring a pot of water to a boil with salt and the broccoli florets.
Boil for 1 minute, then drain and transfer to a paper towel-lined plate. Roughly chop the broccoli after it has dried.
In the same pot, heat 1 tsp of oil over medium-high heat. Sauté the diced scallions for 1 minute until softened. Set aside.
In a large bowl, whisk together the flour, baking powder, and salt. Add the milk, eggs, and 1/4 cup olive oil and mix until you achieve a thick batter. Adjust the consistency with more flour if it’s too runny.
Fold in the crumbled feta, shredded mozzarella, chopped broccoli, sautéed scallions, and chopped dill into the batter.
Pour the mixture into the prepared baking dish, spreading it evenly with a spatula. Sprinkle the grated Pecorino cheese on top and spray lightly with olive oil.
Bake for 45-50 minutes, or until the top is golden brown and the bake is set.
Allow the casserole to cool in the pan for 10 minutes before slicing. Serve warm.
