Chicken, Veg & Rice Stir-Fry (Meal Prep)

Ingredientes

500g chicken breast or thigh

2 cups rice (uncooked)

500g mixed vegetables (e.g broccoli, carrot, capsicum)

2-3 tbsp soy sauce

2 cloves garlic

Oil, salt, pepper

Optional: sesame oil, ginger

Instrucciones

  1. Cook rice per packet instructions; set aside

  2. Chop chicken into bite sized pieces. Season with a little salt & pepper

  3. In a wok or large pan, heat oil, sauté garlic (and ginger if using) until fragrant

  4. Add chicken, cook until nearly done

  5. Add mixed vegetables, stir-fry until tender-crisp

  6. Add cooked rice, a splash of soy sauce (and sesame oil), stir to combine and heat through

  7. Adjust seasoning
