Creamy Tuscan Shrimp with Pasta

1-2 lbs of shrimp ( I use 2...lol), peeled
1/3 Cup minced garlic (we love garlic, but if you don't just add a wee bit!)
1 Cup diced onion
I mini bar bottle of white wine (optional)
I jar of sundried tomatoes - you're gonna use juice and all.
1 Stick Butter
4 cups half and half (you can use heavy cream-thicker, or milk-thinner instead!)
1 TBSP italian seasoning
3 cups fresh spinach.
1-2 cups of shredded parmesan cheese.
Your choice of pasta (I used 1/4 of the Sams Club cheese tortellini-I just add it in -no need to cook it, but you can also cook any pasta you want and toss it in, it's great with fettuccine! You can ALSO do pasta free, and it's more like a soup.
1/2 stick butter and all shrimp - cook for 3 minutes (turning once) and remove to plate. DO NOT DRAIN.
SAME PAN - use the other half stick of butter add garlic and onion and sweat. - then add wine, sundried tomatoes ( juice and all) stir and cook 5 minutes
Add italian seasoning and stir
ADD Half and Half and stir - cook until it begins to bubble.
ADD Cooked Pasta
ADD Cooked Shrimp
ADD Spinach - stir until bubbles again.
ADD Parmesan Cheese
Stir well. Add some salt and pepper to your touch.
Turn off-leave on stove-and cover for 5 minutes.
SERVE!
Add more cheese if you'd like on serving.
