Snowballs (Mexican Wedding Cookies)

Ingredientes

1 cup butter (softened)

1/3 cup white granulated sugar

2tsp water

2 tsp vanilla

2 c all purpose flour

1 c chopped pecans

1/2 c confectioners (powdered sugar)

Instrucciones

In medium bowl cream together white sugar and butter until smooth. Add water and vanilla. Stir until we’ll blended. Stir in flour and pecans. Mix well.

Cover dough and chill at least 4 hours. I chill overnight.

Preheat oven to 325*

Shape dough into walnut sized balls and place on baking sheet.

2 inches apart. Even though they don’t spread they need room to bake all around.

Bake 18-20 minutes.

Cool for 5 minutes then roll in confectioners sugar twice.

Notas

This makes 2 dozen so I always at least double it.

These freeze well for 6-10 months in a ziplock bag.
