Cauliflower Tofu Burritos 🌱🔥
Recipe:
Cauliflower & tofu:
1 small head cauliflower
200 g tofu
3 tbsp oil
2 garlic cloves
1 tbsp agave syrup
1 lime, juiced
1 tsp oregano
2 tsp smoked paprika
1 tsp coriander
2 tsp cumin
salt
1 tsp cayenne pepper
Fresh salsa:
2-3 medium tomatoes
1/2 red onion
1 jalapeno
1 lime, juiced
small bunch cilantro
salt & pepper
Black beans:
1 tbsp oil
1 garlic clove
250 g beans (with cooking liquid)
1/2 tsp cumin
1 tsp chili powder
1/2 lime, juiced
salt
tortillas
quinoa
cilantro
avocado
❶ Break up the cauliflower into florets, cut the tofu, then mix with the remaining ingredients. Bake at 220°C for 20-30 minutes until it nicely browned.
❷ Finely chop all ingredients for the salsa, combine in a bowl and set aside.
❸ For the beans, saute garlic in a little oil for 30-60 seconds, then add the beans with their cooking liquid. Season, then let it simmer until thickened.
Instrucciones
Heat the tortillas in the oven for 2-3 minutes (this makes them more flexible).
Assemble all fillings, roll tightly and seal in a pan. Enjoy!
