Ingredients (1 serving):

1 pack Sun Noodle yakisoba stir-fry noodles (160g)

5 oz boneless skinless chicken thigh

1 cup pork bone broth (chicken bone broth as a replacement since it is more widely available)

1 cup water

2 tbsp nonfat plain Greek yogurt

1½ tsp white miso paste

1- 1 1/2 tsp low-sodium soy sauce

¼ tsp grated garlic

¼ tsp grated ginger

Salt, garlic powder

1 soft-boiled egg

Bok choy

Optional: scallions, sesame seeds, chili oil

Instrucciones

Season chicken with salt + garlic powder. Sear until cooked, then slice.

Simmer bone broth, water, miso, soy sauce, garlic, and ginger. Remove from heat and whisk in yogurt.

Boil egg 6½ min, peel and slice.

Cook noodles.

Assemble: noodles + broth + toppings.
