Apple Cider Donuts

Apple cider ingredients:

• 5 apples, cut into chunks (any variety or mix)

• 1 orange, cut into chunks

• 2 cinnamon sticks

• 1 tsp (2 g) pumpkin pie spice

• Water, enough to cover fruit (add more as needed)

• Optional: sweetener (about 2–4 tbsp / 25–50 g brown sugar, honey, or maple syrup)

Donut ingredients:

• Cooking spray

• 1 cup (110 g) all-purpose flour

• ⅔ tsp (3 g) baking powder

• ½ tsp (3 g) fine salt

• 1 tsp (2 g) ground cinnamon, divided

• 1 stick (½ cup / 113 g) unsalted butter, room temp (divided: 5 tbsp / 70 g for batter, 3 tbsp / 43 g melted for coating)

• ⅓ cup (70 g) brown sugar

• ⅓ cup (65 g) granulated sugar (2 tbsp / 25 g for batter, ¼ cup / 50 g for coating)

• 1 egg (large)

• ½ tsp (2.5 ml) vanilla extract

• ¼ cup (60 ml) apple cider (from above or store-bought)

Instrucciones

Apple cider steps:

1. Add apples, orange, spices, and water to a large pot.

2. Simmer at least 2 hrs until fruit is soft.

3. Mash fruit against the pot with a wooden spoon.

4. Simmer 15 more min, then taste. Add water or sweetener if desired.

5. Strain and serve warm, or cool to use in the donuts.

Donut steps:

1. Heat oven to 350°F (175°C). Spray donut pan or muffin tin.

2. In a large bowl, whisk 5 tbsp (70 g) butter with brown sugar + 2 tbsp (25 g) sugar until light and fluffy.

3. Whisk in egg and vanilla.

4. Add flour, baking powder, salt, and ½ tsp cinnamon. Mix until combined.

5. Stir in apple cider until smooth.

6. Fill molds ½–⅔ full (since they’ll rise significantly in the oven).

7. Bake 10–15 min (longer if muffins) until a toothpick comes out clean.

8. Mix ¼ cup (50 g) sugar + ½ tsp cinnamon in a bowl.

9. Brush or dip donuts with melted butter, then roll tops in cinnamon sugar.
