One-pan Chicken Pot Pie with Biscuits

1 onion
2 carrots
2 celery stalks
1/3 cup butter
garlic
thyme
rosemary
parsley
salt & pepper
1/3 cup flour
2 cups chicken broth
1/2 cup heavy whipping cream
1 cup frozen peas
2 chicken breasts (shredded) or a rotisserie chicken
refrigerated biscuits
Instrucciones
melt butter in a large sauté pan
cook onions, carrots, and celery until tender long with garlic and seasonings
stir in flour and cook down for about 1 minute
add in chicken broth and heavy cream and bring to a boil until thickened
mix in frozen peas and shredded chicken
top with refrigerated biscuits
place pan in oven and follow baking directions for biscuits (mine was 375° for 12ish minutes)
