Apple Fritter Bites

Ingredientes

1 ½ cups plain flour

1 tbsp caster sugar

2 tsp baking powder

½ tsp salt

2 large eggs

⅔ cup of milk

1 tbsp The Good Oil extra virgin rapeseed oil

3 small apples, peeled, cored, and finely diced (Gala, Braeburn or Granny Smith work well)

Juice of half a lemon

2 tbsp brown sugar

1 tsp cinnamon

Oil for frying (The Good Oil extra virgin rapeseed oil)

⅔ cup caster sugar (for serving)

1 tbsp brown sugar (for serving)

½ tsp cinnamon (for serving)

Instrucciones

In a large bowl, whisk together flour, caster sugar, baking powder and salt. In a separate bowl, whisk together eggs, milk, and oil until smooth. In another bowl, toss the diced apple in lemon juice, then mix in the brown sugar and cinnamon.

In a deep, heavy-bottomed pot or pan, heat about 2 inches of oil over medium heat until hot. Pour the wet ingredients into the dry ingredients and fold until just combined (don’t overmix!). Gently fold in the apple mixture.

Carefully drop tablespoon-sized dollops of batter into the hot oil. Fry in batches, flipping occasionally, for 2–3 minutes per side, or until golden brown and puffed. Use a slotted spoon to transfer cooked fritters to a paper towel-lined plate to drain. To check if the fritters are fully cooked, break one in half and make sure the centre is firm and free of any raw batter.

While the fritters are cooking, mix together caster sugar, brown sugar, and cinnamon in a shallow dish, then roll the hot fritters in the mixture until well coated. Serve immediately while crisp and fluffy!
