Creamy Garlic Parmesan Chicken

Ingredients (serves 2):

2 medium chicken breast
1 tsp olive oil
20g butter
3-4 garlic cloves, minced
80g cherry tomatoes (around 7 tomatoes)
100ml chicken stock
50g reduced-fat soft cheese
1 tsp grated Parmesan, plus extra for garnish
Fresh coriander
Seasoning: chicken seasoning, salt, pepper, and paprika
Instrucciones
Season both sides of the chicken breasts with chicken seasoning, salt, pepper, and paprika).
Heat 1 tsp olive oil Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
Lower the heat and add butter to the same pan. Stir in the minced garlic and cook until fragrant. Toss in the cherry tomatoes and cook until softened.
Pour in chicken stock, stir, and let it simmer for a minute. Add the soft cheese and stir until melted and fully combined. Adjust seasoning to taste.
Place the chicken back into the pan, spoon the creamy sauce over, and simmer for 2-3 minutes. Sprinkle with 1 tsp Parmesan and chopped coriander.
Plate the chicken and sauce over the mash Garnish with extra Parmesan and fresh coriander.
