Kale and Amino Acid Salad

1 pound baby kale or black kale

1 large sweet or Vidalia onion, diced

1/4 cup extra virgin olive oil

1/4 cup grape seed oil

2 tbsp plus 1 tsp Bragg Liquid Aminos

1 tsp kosher salt

Juice of 1 large lemon

1 tsp apple cider vinegar

1/4 tsp red pepper flakes

1/4 cup Bragg nutritional yeast flakes, plus more for serving

Instrucciones

1. If using black kale, strip the leaves off their stalks, then wash and dry them. Roughly chop or slice the black kale into wide ribbons. Baby kale can be left whole. Place the kale in a large bowl and add the onion, olive oil, grape seed oil, liquid aminos, salt, lemon juice, and vinegar. Toss it all together and set the mixture aside for 30 minutes, tossing it periodically. This can be done up to 2 hours before serving, but if you'll be holding the salad for more than 30 minutes, store it in the refrigerator or it will become soggy.

2. Just before serving, add the red pepper flakes and nutritional yeast to the salad and toss gently. Once the nutritional yeast has been added, the dressing should take on an almost creamy consistency.

3. Serve this salad in a large chilled bowl topped with an extra shake of nutritional yeast.
