Miso Caramelised Onion Udon

3 large onions, thinly sliced
500g chicken thighs
1 tbsp neutral oil (such as avocado oil)
pinch of salt (optional, helps onions caramelize faster)
6 garlic cloves, minced
300ml cups heavy cream
3 heaping tbsp miso paste
1/2 tbsp soy sauce
freshly ground black pepper, to taste
50g grated parmesan cheese (or more, to taste)
700g fresh or frozen udon noodles (x5 ready to wok packets)
200ml chicken stock
chopped parsley, for garnish
Spring onion, for garnish
Instrucciones
Cook your chicken thighs with salt and pepper
Caramelise your onions in the chicken oil on a medium-low heat with a pinch of salt. This should be at least 30 mins until brown and jammy.
Stir in the garlic and cook for 1-2 mins until fragrant.
Pour in the heavy cream, then mix in the miso paste, soy sauce, black pepper until the miso dissolves. Simmer gently for 3–5 minutes.
Add your udon packets alongside the chicken stock.
Stir in the Parmesan and add some more water if needed to keep the creamy consistency.
Add the chicken back in and stir in most of the parsley.
Plate up with remaining parsley, extra parmesan and black pepper.
