ONE PAN CRISPY CHICKEN WITH GARLICKY GREENS
for the chicken:
1 pound boneless, skinless chicken breasts
½ tsp salt
¼ tsp pepper
1 tbsp butter
almond flour for coating
for the sauce:
2 tbsp butter
1 shallot, finely diced
4 cloves garlic, minced
1 ½ cups white wine or chicken stock
1 cup heavy cream or coconut cream
3 cups fresh spinach
½ cup parmesan cheese, grated
fresh parsley (optional for garnish)

Instrucciones
1️⃣ season chicken, coat in almond flour, and pan-fry ‘til perfectly crispy and golden.
2️⃣ in the same skillet, melt butter, sauté shallots + garlic, then add white wine (or chicken stock) to deglaze.
3️⃣ stir in cream and let it thicken into a silky sauce.
4️⃣ wilt fresh spinach right in the sauce, then nestle the chicken back in and top with parmesan + parsley.
