Chicken Lettuce Wraps
1 pound ground chicken, or 1 large breast if grilling
1 tbsp olive oil
½ cup yellow onion, minced
4 green onions diced
2 large garlic cloves, minced
1 tsp crushed red chili pepper flakes
2 mushrooms, cremini or similar, diced
8 ounces whole water chestnuts, drained and diced
1 teaspoon fresh ginger, grated
1 head butter lettuce, or baby Romaine lettuce, or similar
Sauce
▢5 tablespoons low-sodium soy sauce, tamari/coconut aminos
▢1 tablespoon sesame oil, toasted
▢2 tablespoons rice wine vinegar
▢2 tablespoons hoisin sauce
▢1 ½ teaspoons lime juice
▢salt and pepper, to taste
