330g Lean rump steak, room temperature

2 tsp Soy sauce

1 tsp Chinese five spice

1 Egg, whisked

30g Cornflour

For the egg fried rice:

100g Basmati rice, dry, cooked & cold

50g White onion, finely diced

1 Egg

80g Frozen peas

1 tsp Sesame oil

2 tsp Dark soy sauce

For the sauce: mix 2 1/2 tbsp hoisin sauce, 1 tsp soy sauce, 1 tsp white rice vinegar, 1 tsp honey, 1 tsp

minced garlic

Instrucciones

Tenderise the beef using cling film and a rolling pin or meat tenderiser. Slice the beef into thin strips, marinade with soy sauce then dip into the whisked egg then cornflour.

Place on a lined baking tray and cook on 200C fan for 15-20 minutes or until crispy. In a small bowl mix the sauce ingredients together along with 1 tbsp of water.

Once the beef has cooked, pour the sauce into a large frying pan or wok and crank the heat on high until it starts to bubble. Mix the beef into the sauce until the beef is evenly coated.

For the egg fried rice, fry the onions in sesame oil for a few minutes to soften. Add the peas and cook for a further few minutes before adding the egg and scramble.

Mix in the rice then pour in the dark soy sauce and mix everything together. Serve with the optional spring onions and prawn crackers, then dive right in.
