Greek Salad (JAM style)

broth (Better Than Boullian brand, paste is good)
boneless chicken thighs
persian cucumbers
3 lemons
1 garlic
1 red onion
fresh dill
italian parsley
sun-dried tomatoes OR cherry tomatoes
feta cheese
greek yogurt (16oz at least)
1 can chickpeas
sliced green olives
sliced kalamata olives
olive oil
red wine vinegar
sugar
oregano
paprika
mint dried (optional)
red pepper flakes (optional)
salt and pepper
Instrucciones
Base is either: israeli couscous (2 cups) cooked with broth or lettuce, like arugula or mixed greens
Chop and combine in a bowl: persian cucumbers, sun-dried tomatoes OR cherry tomatoes, sliced kalamata olives, sliced green olives, red onion, chickpeas, feta cheese
For Dressing, combine: olive oil (1/2 cup), red wine vinegar (1/4 cup), lemon juice, dash of sugar, italian parsley, oregano, 1-2 cloves of garlic minced, fresh dill, salt and pepper, red pepper flakes (optional), a few blended sun-dried tomatoes (optional)
Option to add Chicken: Marinate boneless chicken thighs in greek yogurt (1 cup), lemon juice, garlic minced (2-3 cloves), italian parsley, mint dried (optional), oregano, paprika, salt and pepper
Tzatziki sauce: greek yogurt (1 cup), lemon juice, garlic minced (1 cloves), dill, paprika, cucumber (minced or chopped finely)
