Mini Turkey Meatballs Vegetable Soup

MEATBALLS

1½ pounds 93% lean ground turkey breast

¼ cup seasoned bread crumbs, whole wheat or gluten-free

¼ cup freshly grated Parmesan cheese

¼ cup finely chopped fresh parsley

¼ cup finely chopped onion

1 large egg, beaten

1 garlic clove, minced

¼ teaspoon kosher salt

Cooking spray

SOUP

2 teaspoons olive oil

1 cup chopped carrot

½ cup chopped celery

½ cup chopped onion

2 garlic cloves, minced

4 cups reduced-sodium chicken broth*

2 (14.5-ounce) cans no-salt-added petite diced tomatoes

Parmesan cheese rind (optional)

1 sprig of fresh rosemary

2 bay leaves

¼ cup chopped fresh parsley

2 tablespoons chopped fresh basil

½ teaspoon kosher salt

Freshly ground black pepper

8 ounces zucchini (from 1 medium), cut into ½-inch cubes

2 cups chopped baby spinach

Freshly grated Parmesan cheese, for garnish (optional)

*Read the label to be sure this product is gluten-free.

Instrucciones

For the meatballs: In a large bowl, combine the ground turkey, bread crumbs, Parmesan, parsley, onion, egg, garlic, and salt. Using clean hands, gently mix well. Form 42 small meatballs that are about 1 tablespoon each.

Heat a Dutch oven or large pot over medium-high heat. Spray it with oil. Working in 3 or 4 batches, cook the meatballs until browned on one side, 2 to 3 minutes. Turn and brown the other side, 2 to 3 minutes.

Transfer to a plate.

For the soup: To the pot, add the oil, carrot, celery, onion, and garlic.

Cook, stirring, until the vegetables are softened, 10 to 12 minutes. Add the broth, tomatoes, Parmesan rind (if using), rosemary, bay leaves, parsley, basil, salt, and pepper to taste. Bring to a boil. Reduce the heat to low, cover, and cook until the vegetables are soft and the flavors meld, 30 to 40 minutes.

Discard the bay leaves, rosemary sprig, and Parmesan rind. Drop the meatballs in, along with the zucchini and spinach. Cover and simmer until the zucchini is tender and the meatballs are cooked through, 8 to 10 minutes. Serve with grated Parmesan on top, if desired.
