2 medium carrots shredded

1/2 English cucumber cut in cubes or rounds

1 large avocado

3/4 cup feta cheese crumbled

1 large red pepper

3/4 cup cilantro

1/2 cup walnuts

Tahini sauce

1/2 cup tahini

6 tbsp water

2 tbsp olive oil

1 garlic clove (shredded on a Microplane)

1 tbsp maple syrup

1 tbsp orange juice

Dash of chili powder (or chipotle)

Salt and pepper to taste
