Crispy Falafel Salad Bowl

Ingredientes

For the falafel:

1 can chickpeas, drained

1 small onion, roughly chopped

2 garlic cloves

3 tbsp chopped parsley

1 tsp ground cumin

½ tsp ground coriander

2 tbsp plain flour

Salt and pepper, to taste

Oil for frying

For the salad:

1 cup shredded lettuce

1 cup chopped cucumber

1 cup chopped cherry tomatoes

½ cup shredded cabbage

Fresh parsley, chopped

For the tahini dressing:

2 tbsp tahini

Juice of ½ lemon

1 tbsp olive oil

1 tbsp water

1 tsp maple syrup

Pinch of paprika and salt

Instrucciones

Blend chickpeas, onion, garlic, parsley, cumin, coriander, flour, salt and pepper in a food processor until coarse and sticky. Shape into balls.

Heat oil in a pan and fry the falafel until golden and crisp, turning to cook evenly.

In a bowl, arrange lettuce, cucumber, tomatoes, and cabbage. Top with warm falafel.

Whisk together the tahini dressing ingredients until smooth, adding more water for a thinner consistency.

Drizzle over the salad, garnish with parsley, and enjoy warm.
