Shrimp Sushi Bake with Sriracha Mayo & Sesame Seeds

Ingredientes

1 cup cooked rice of your choice: preferably sushi rice!

12 large shrimp, shell peeled and deveined, chopped

3-4 sheets Sushi Nori roasted seaweed sheets- sliced into squares large enough to place over a muffin pan

Fresh lemon juice before serving

1/2 Tbsp sesame seeds (for sprinkling at the end)

Spicy Mayo (combine)

2 Tbsp sriracha

2 Tbsp Japanese mayo

1 Tbsp soy or tamari sauce

Instrucciones

Preheat oven to 350F and get 2, 6-muffin tins ready.

Pat dry shrimp and rough chop, then set aside. Season with a sprinkle of sea salt and ground pepper and coat them in sriracha mayo.

Place cold, but cooked rice over each Nori sheet- then pat down with clean hands or the back of a spoon. Place marinated shrimp over the rice and then over each individual muffin spot as if they were muffin holders. Bake for ~5 mins and enjoy! You can garnish finely-chopped chives or sesame seeds.
