High Protein Mexican Rice Bowl
180g raw rice
800g Chopped tomatoes
240g red kidney beans, drained
200g onion, diced
200g mixed peppers, chopped
600g chicken thighs, chopped
100g cheddar cheese, grated
300ml chicken broth
Salt, pepper, paprika, cumin
1. Combine the rice, kidney beans, onion, peppers, chicken thighs, chicken broth and spices in a large ovenproof dish and mix well.
2. Bake in a preheated oven at 180 C for 45 minutes until the rice is tender and the liquid is absorbed.
3. Remove from the oven, sprinkle the cheddar cheese over the top and allow it to melt before serving.
