Wortel Appelsien Cake

1 cup grated carrot (110g)
3 eggs
1 cup almond flour
Zest of 1 orange (only the orange part, avoiding the white)
1/4 cup natural sweetener (such as erythritol or granulated stevia, adjust according to desired sweetness)
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger (optional, for a spicy touch)
1 teaspoon baking powder
1 pinch salt
Instrucciones
Preheat the oven:
To 180°C (350°F) and lightly grease a round pan or line with baking paper.
Prepare the mixture:
In a large bowl, beat the eggs until well mixed.
Add the grated carrot, orange zest, sweetener, cinnamon, ginger and salt. Mix well.
Stir in the almond flour and baking powder. Stir until smooth.
Bake:
Pour the mixture into the prepared pan and spread evenly.
Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool and serve:
Let the cake cool in the pan for 10 minutes before unmolding.
You can decorate it with a little orange zest or unsweetened shredded coconut if you wish.

Notas
This recipe doesn’t include oil or butter, but the moisture from the grated carrot and eggs should keep the cake soft. However, if you prefer a richer texture, you can add 2–3 tablespoons of melted coconut oil or unsalted butter
