Red pepper sundried tomato pesto pasta salad
You guys love this series, so I am back with another prepable salad that won’t go soggy. Full of flavour from sweet roasted peppers, juicy tomatoes, and a punchy sundried tomato pesto. Full of protein but lots of gorgeous goodness too. It’s the kind of dish that only gets better as it sits, making it ideal for meal prep or even as a side at a BBQ!
you will need to serve 3
approx 510 kcal & 40g protein
180g pasta uncooked weight
200g cherry tomatoes, cut in 1/2
1 red onion, finely diced
250g cooked chicken breast, shredded
2 large roasted red peppers from the jar, diced
2-3 large handfuls of rocket
for the pesto
1 large roasted red pepper from the jar
1 tsp garlic granules or paste
1/2 tsp chilli flakes
1 tbsp tomato puree
6-8 sundried tomatoes, drained from oil
juice 1/2 lemon
Large fistful of fresh basil
6 kalamata olives
30g parmesan, grated
Pinch of salt
Cook pasta according to packet instructions in salted water until done (NOT al dente!) keep a little pasta water, then drain and set to one side.
Prepare the pesto by blending the roasted red pepper, garlic, chilli flakes, tomato puree, sundried tomatoes, lemon juice, basil, kalamata olives, parmesan, and salt in a food processor until smooth.
Instrucciones
In a large bowl, combine the pasta, cherry tomatoes, red onion, shredded chicken, diced roasted peppers, and rocket. Mix in the pesto. Store in airtight containers in the refrigerator. This salad stays fresh and won't go soggy, making it perfect for meal prep and lunches throughout the week.
