Beef and Cheese Chimichangas

1 lb ground beef
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning
1/2 cup water
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6 large flour tortillas
1/4 cup melted butter or vegetable oil (for brushing)
Sour cream, salsa, and chopped cilantro for serving
Instrucciones
Cook the Beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain excess fat if necessary.
Add Seasoning: Stir in the taco seasoning and water. Cook for an additional 5 minutes, allowing the mixture to thicken. Remove from heat and let cool slightly.
Add Cheese: Mix in the shredded cheddar and Monterey Jack cheeses until well combined.
Assemble the Chimichangas: Lay a flour tortilla flat on a clean surface. Spoon about 1/4 cup of the beef and cheese mixture onto the center of the tortilla. Fold in the sides and roll it up tightly to enclose the filling. Repeat with the remaining tortillas and filling.
Brush with Butter: Preheat your oven to 425°F (220°C). Place the chimichangas seam-side down on a baking sheet lined with parchment paper. Brush the tops with melted butter or vegetable oil.
Bake: Bake in the preheated oven for 20-25 minutes, or until the chimichangas are golden brown and crispy.
Serve: Remove from the oven and let cool for a few minutes. Serve warm with sour cream, salsa, and chopped cilantro for dipping. Enjoy this deliciously crispy and cheesy treat!
