Ingredientes

Salmon Ingredients:

1, 2 lb skin-on salmon tail (bones removed)

⅓ cup teriyaki

1 lemon sliced thin

Wasabi Mayo Ingredients:

3 tbsp kewpie mayo

1½ tbsp wasabi

Rice Ingredients:

2 ½ cups cooked sushi rice

2 tbsp rice wine vinegar

½ tsp salt

2 tsp sesame oil

1 tbsp avocado oil

Glaze Ingredients:

⅓ cup teriyaki sauce (I used Kikkoman Takumi Teriyaki sauce)

corn starch slurry

Garnish Ingredients:

2 tbsp black sesame seeds

½ cup tobiko of choice

2 tbsp chopped parsley

Instrucciones

Preheat oven to 400°F

Start by butterflying the salmon or just show the fishmonger at your local fish market this video and ask them to do it for you.

Brush the inside and outside with ⅓ cup of teriyaki.

Add the wasabi mayo ingredients to a small bowl and mix well.

Add all of the rice ingredients to a medium-sized bowl and mix well.

Spread the wasabi mayo inside the salmon as shown, then fill the inside with all of the sushi rice.

Close, brush with more teriyaki, top with lemon slices, and bake for 17 minutes.

Remove the lemon slices, top with black sesame seeds, tobiko, and parsley!
