Swadish Punjabi masala fried chicken

500g chicken with or without bones
1/2 lemon (juice)
1 tsp turmeric powder
1/2 tsp salt
5 tbsp vegetable oil
50g unsalted butter
2 onion (finely chopped)
10 cloves of peeled garlic (finely chopped)
2 tbsp peeled ginger (finely chopped)
2 tsp Kashmiri red chili powder
2 tbsp coriander powder
2 tbsp garam masala
2 tsp turmeric powder
1 tsp cracked black peppercorns
1 tsp dry fenugreek leaves (Kasoori Methi)
4 tomatoes (finely chopped)
2 mild green chillies (finely sliced)
3 tbsp coriander leaves (chopped)
2 tbsp cold butter (optional)
Sliced ginger
Salt as required
Warm water as required
Instrucciones
Mix together juice of half lemon, turmeric, salt. Add to chopped chicken thigh pieces, marinate.
Oil and butter in pan on medium heat, add onions and fry 2-3 minutes until starting to brown.
Add chopped garlic and chopped ginger, cook 3-4 minutes.
Turn heat to lowest, and add garam masala, red chili powder, coriander powder, black pepper, kasoori methi leaves, turmeric powder. Stir and cook just 30-40 seconds.
Add chopped tomatoes and salt, and cook until soft and disintegrating into the sauce.
Add warm water and continue cooking until the mixture is thick.
Add marinated chicken, stir, and pan fry until all sides of chicken are seared. Add warm water, turn the heat down to lowest, cover and let simmer 5-6 minutes.
Open the lid and cook another 3-4 minutes.
Add chopped chilies (optional), chopped cilantro leaves, cold butter, and thinly sliced ginger.
