Hawaiian Banana Bread

Ingredientes

1 large banana, ripe & mashed

1/4 cup greek yogurt (or dairy free coconut yogurt!)

2 large eggs, room temperature

1/4 cup coconut oil, melted

1 20oz can of crushed pineapple *do NOT drain

3/4 cup coconut sugar

1 tsp vanilla extract

2 cups all purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/3 cup coconut shreds/flakes

For the coconut glaze (optional):

1 1/2 cup powdered sugar

1/4 cup coconut milk

1/2 tsp vanilla extract

Instrucciones

Combine your mashed banana, Greek yogurt, coconut oil, eggs, sugar, crushed pineapple, & vanilla. Mix well until combined.

Fold in your flour, baking powder, & baking soda. Mix well until a batter has formed, then fold in your coconut flakes.

Pour batter into a parchment paper lined 9x5 loaf tin. Top with additional coconut flakes. Bake @ 350 degrees for 50-60 minutes, or until a toothpick inserted in the center comes out clean. *Keep an eye on the coconut flakes - loosely cover with a piece of tin foil once they begin to toast/brown.

Remove loaf & let cool. Meanwhile, prepare the coconut glaze. Combine your powdered sugar, coconut milk, & vanilla in a small bowl, mixing until combined. Pour over top of loaf, slice, & enjoy!
