1 small diced onion
2 cloves of garlic
1 lb ground beef
1 tube chorizo
28 oz crushed tomatoes
1 tbsp balsamic vinegar
2 tbsp Worcestershire sauce
6 oz tomato paste
1.5-2 cups beef broth
1 can rinsed pinto beans
1 tbsp bbq sauce
1 tbsp sugar
1 packet of chili seasoning
2 tsp onion powder, garlic powder, cumin, chili powder, chicken bullion powder
3 cups shredded cheddar
1 box cornbread mix, mixed to package instructions
Sour cream for serving
Instrucciones
Brown ground beef and drain
Add onions and chorizo
Once meat is cooked and onions are softened, add in the rest of ingredients
Cover with lid and simmer for 10 minutes, stirring occasionally
Preheat oven to 375
Mix cornbread to package instructions
Once chili is cooked, add to ramekins filling almost to the top
Top each ramekin of chili with cheese
Pour cornbread on top to cover chili
Bake on lined baking pan for 25-30 minutes
Let cool 10-15 minutes before serving
Garnish with sour cream
Notas
If cooking in a slow cooker, add oil to bottom then onions and ground up meat. Cook on low for 4 hours.
