Creamy Cajun Prawn Pasta

Ingredientes

Prawn Marinade:

  • 400g Large Argentinian prawns

  • Juice of 1 Lemon

  • 2 tablespoons Olive Oil

  • 1 tablespoon Cajun Seasoning

  • 1 teaspoon Garlic Powder

  • 1 teaspoon Red Paprika Powder

  • 1 teaspoon Smoked Paprika Powder

  • 1 teaspoon Dried Oregano

Pasta Ingredients:

  • 3 tablespoons Unsalted Butter

  • 1 Jalapeño diced

  • 1 Red Pepper diced

  • 1 Yellow Onion diced

  • 200g peeled plum tomatoes

  • 200ml double Cream

  • Fresh Parsley chopped

  • 500g Rigatoni Pasta

  • parmesan topping

Seasonings for Pasta Sauce:

  • 1 tablespoon Cajun Seasoning

  • 1 teaspoon Garlic Powder

  • 1 teaspoon Red Paprika Powder

  • 1 teaspoon Smoked Paprika Powder

  • 1 teaspoon Dried Oregano

Instrucciones

  1. Wash the prawns thoroughly and let them dry

  2. In a mixing bowl, combine the prawns with lemon juice, olive oil, Cajun seasoning, garlic powder, red paprika powder, smoked paprika powder, and dried oregano (can leave to marinate for 3 hours if want). Mix well and coat in corn starch.

  3. Heat a large skillet over medium-high heat and add a drizzle of oil.

  4. Fry the marinated prawns for 1-2 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.

  5. In the same skillet, add the unsalted butter and let it melt.

  6. Add the diced jalapeño, red bell pepper, and yellow onion. Sauté for 7-10 minutes until the vegetables are soft and fragrant.

  7. Pour in the tomato sauce and stir for 2-3 minutes.

  8. Add the cream, along with the remaining Cajun seasoning, garlic powder, red paprika powder, smoked paprika powder, and dried oregano. Stir to combine.

  9. Return the cooked prawns to the skillet and add the chopped parsley and freshly grated Parmesan (if using). Let the sauce simmer for about 5 minutes, allowing the flavors to meld together.

  10. Meanwhile, cook the rigatoni pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve some pasta water before draining.

  11. Combine and Serve:

  12. Add the cooked pasta to the skillet with the sauce, along with a splash of the reserved pasta water. Toss everything together. Taste and adjust seasoning with salt and pepper as needed.
