Black Bean Quinoa Chili

Ingredientes

1 large brown onion, diced

5 garlic cloves, crushed

2 tbsp tomato paste

1 tsp ground coriander

1 tbsp ground cumin

3 tsp smoked paprika

1 tsp dried parsley

1 tsp garlic powder

1/2 - 1 tsp ground chili

Salt to taste

400g can diced tomatoes

1 cup dry quinoa, rinsed

1/2 cup dry red lentils, rinsed

750ml vegetable stock/broth

2 cans of beans (black beans, red kidney), drained and rinsed

1 lemon, juiced

Instrucciones

Place a large pot over medium heat with some olive oil and sauté the onion and garlic until lightly browned.

Add in the tomato paste and spices, cook until fragrant then stir through the canned tomatoes.

Add the uncooked quinoa, lentils and stock. Stir and bring to a boil. Place on the lid and reduce heat, simmering until liquid is absorbed and quinoa/lentils are cooked – roughly 20 minutes.

Stir through the beans and lemon juice and add salt to taste.

Serve in a bowl with corn chips and avocado or in wraps with salad, avocado and hummus. Enjoy.
