Fancy Pide 😁💅💄🥳
Ingredients
1 cup = 200 ml
Makes 16 pieces with this measurement
For the Dough
• 625 g flour (5 cups)
• 200 ml warm water (1 cup)
• 200 ml warm milk (1 cup)
• 50 ml vegetable oil (5 tablespoons)
• 10 g granulated sugar (1 level tablespoon)
• 15 g salt (1.5 teaspoons)
• 10 g instant yeast (1 packet)
Dough Preparation
Put the flour into a bowl and make a well in the center. Add the water, milk, yeast, and sugar. Let it rest for 5 minutes. Then add the salt around the edges of the flour and start kneading. Once the dough comes together, add the vegetable oil and knead until smooth.
Cover the dough airtight and let it rise until doubled in size.
Transfer the risen dough onto the counter and gently gather it with a little flour into one large dough ball. Lightly flour the surface and roll it out with a rolling pin — not too thin, not too thick.
Using a lid (about 20 cm in diameter), cut out round shapes. Gather the leftover dough, reshape it into a ball, roll it out again, and repeat the same process.
Minced Meat Filling
• 500 g ground beef
• 2 medium onions
• 2 green peppers
• 1 red capia pepper
• 1 medium tomato
• Salt, black pepper, chili flakes
• 4 tablespoons vegetable oil
• 1/2 tea glass water
• Parsley
• 5 tablespoons tomato sauce (homemade canned from last year 😬)
For the Topping
• Grated kasar cheese
Filling Preparation
Finely chop all the vegetables (I used my food processor instead of grating the onion). Add everything to the minced meat and mix well — the filling is ready.
Place one heaping spoon of filling onto each dough round, spread it gently with your fingertips if you like, and sprinkle grated cheese on top.
Honestly… the taste was AMAZING. I don’t usually brag about my food, but this might be the best thing I’ve ever made 🙂↔️😎
While preparing them, preheat the oven well. There’s no second proofing. Bake in a 200°C (392°F) fan-assisted oven, on the middle rack, until beautifully golden.
