Personal Pan Tomato and Goat Cheese Tart

3 Tbsp. olive oil, divided
1 store-bought pie crust
4 oz. garlic and herb goat cheese
2 large tomatoes
Salt and freshly ground black pepper
Fresh basil, for garnish
Instrucciones
Preheat oven to 425F. Coat a 12-inch cast iron skillet (or medium-sized baking sheet) with one tablespoon of the olive oil, then add pie crust. Spread goat cheese on the pie crust and top with a layer of tomatoes; season with salt and pepper. Curl the edges of the pie crust over the tomatoes and brush with another tablespoon of the olive oil. Bake in preheated oven until crust is browned, about 20 minutes. Brush with remaining olive oil while hot and let cool in the pan for at least 10 minutes; garnish with fresh basil before serving.
