Marry Me Chickpeas

Ingredientes

2-4 tbsp unsalted butter

4 cloves garlic (minced)

1 tsp salt

1/2 tsp crushed red pepper

1/2 tsp black pepper

1 tsp oregano

1 tsp herbs de Provence

2 tsp smoked paprika

Drizzle of Olive Oil

1/2 cup chopped sundried tomatoes in oil

1 cup broth (chicken or veg.)

2 15oz cans chickpeas

1 cup heavy cream

1/2 cup grated parmesan

2 tbsp chopped fresh basil

3 tbsp tomato paste

Instrucciones

1. Heat a pan & drizzle in olive oil.

2. Melt butter in pan. Start w/ 3 tbsp and add more if needed based on spices content.

3. Saute garlic w/ spices until garlic is fragrant but not bronwed (about 2 minutes w/ constant stirring). It should look like a roux while it cooks w/ the butter & spice mix seeming to grow or inflate.

4. Mix tomato paste into broth.

5. Stir in tomatoes, chickpeas, and broth mix.

6. Simmer for about 10 minutes.

7. Add in heavy cream

8. Add in parmesan & stir until fully melted/combined.

9. Serve w/ warm, crusty sourdough slices
