Coffee Foam

Ingredientes

The last cocktail I posted (1 post back) was a uniquely delicious Coffee Foam topped sipper by @mothercocktailbar's @ericklerch. The foam included in this cocktail was so good it simply deserved a post of it's own.

You can also try this foam on something more simple like a Negroni or and Old Fashioned, but my goodness, you gotta try the Vida aDorada (again, 1 post back).

Coffee Foam

500g Water

50g Vanilla Syrup

100g Simple Syrup

100g Coffee

2g Salt

30g Black Garlic Pickle*

½ Xanthan Gum

2 ½ Methyl Cellulose

ISI double charge

Black Garlic Pickle

500ml water

250ml sugar

250ml white vinegar

15gr black garlic

Sous vide 2 hours 70 Celsius
