Pilsner Pork Tenderloin Sandwiches

4 thinly cut boneless pork chops (about 1 pound)
12 oz pilsner
2 garlic cloves, grated
1 tsp ground mustard
1/4 tsp fine ground sea salt, plus more for seasoning the cooked pork chops
1/4 cup unbleached all-purpose flour
1 large egg, beaten
1 cup panko bread crumbs
Peanut oil for frying (or oil of your preference)
4 hamburger or sandwich buns
Pickles and aioli for serving
Optional: Slices of cheese for serving
Instrucciones
Place a pork chop between 2 sheets of plastic wrap and use a meat tenderizer to pound it to 1/4 inch thickness. Repeat for the remaining pork chops and place them in a casserole dish.
Whisk together the pilsner, garlic, mustard, and the 1/4 tsp of salt in a bowl. Pour the marinade over hte pork chops and turn them to coat evenly. Cover and place in the refrigerator and rest for 30 minutes.
Place the flour, egg, and bread crumbs each in their own shallow bowl. Fill a heavy-bottomed pot with 1/2 to 1 inch of cooking oil and heat over medium-high heat until it sizzles when you drop in some bread crumbs.
Drain the pork chops and discard the marinade. Dredge each chop in the flour and then the egg. Turn to cat it evenly with bread crumbs. Fry until golden brown and cooked through, about 3 minutes on each side. Transfer the pork to a sheet pan covered in paper towels to absorb the excess oil. Sprinkle with salt. Repeat with the remaining pork slices.
Serve warm on a bun with aioli and pickles.
