Spinach Potato Curry

Ingredientes

SPINACH POTATO CURRY

3 cups chopped and peeled potatoes

1 1/2 tbsp avocado oil or vegan butter

3 green chilies finely chopped

1 tbsp grated ginger

1/2 tbsp cumin seeds

1/4 tsp asafoetida (or garlic)

1/4 tsp turmeric

1/2 tbsp garam masala

1 tsp salt

2 fresh tomatoes

3-4 cups chopped fresh spinach

1/4 cup fresh cilantro

A big squeeze of lemon juice

The magic

Instrucciones

add oil to pan and heat

Once hot add in cumin seeds followed by the green chilies and ginger and sauté. Add in the rest of the spices and mix on low heat

Throw in your potatoes and cook for 20 minutes at medium heat with the lid on. Keep an eye on it to make sure nothing burns

Add in spinach tomatoes and fresh coriander and put the lid back on to cook for another 5 minutes

Once potatoes are cooked and spinach and tomatoes have softened squeeze In the lemon

Garnish with chopped fresh coriander
