Biscoff Lava Cookies

12 Tbsp biscoff, frozen
225g butter
140g brown sugar
110g caster sugar
2 large eggs
1 tsp vanilla
165 g cake/biscuit/pastry flour***
245 g plain flour
1 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
200g each white + caramilk choc chips
Cake flour has less protein & makes the cookies moist. If you aren’t using cake flour use 410g total plain flour
Instrucciones
1.Beat the butter until fluffy. Add in all the sugars & beat for 2 mins. Add the eggs and vanilla & beat until fluffy.
2.Add all the flours, cornflour, baking soda and salt. Mix until just combined.
3.Fold in the choc chips.
4.Divide dough into 12 portions. Individually flatten each portion, add a frozen biscoff blob in the centre and completely cover it with cookie dough. Repeat will all dough and place 6 cookies on 2 lined baking tray.
5.Bake one tray in a 200 C oven on the middle shelf for 9 minutes. Repeat with other tray.
Optional: decorate with melted chocolate & biscoff crumbs.
