Step 1 - Prepare the Brisket:
Begin by trimming the fat cap of the brisket to about 1/4" to 1/2". This is a crucial step to ensure even cooking and optimal flavor infusion. While you're doing this, let the brisket gradually come up to room temperature. Remember, a cold brisket is a no-go for the smoker!
Step 2 - Season with Care:
Generously season your brisket with a mixture of black pepper, kosher salt, and garlic powder. Ensure that every inch of the brisket is covered in this simple yet magical blend, as this will form a delicious crust during the smoking process.
Step 3 - The Smoking Ritual:
Place the brisket on the smoker, fat cap side down. This positioning is key for protecting the meat from intense heat and allowing the fat to render slowly. Smoke it until the internal temperature reaches 160 degrees Fahrenheit.
Step 4 - Wrap and Return:
Once at 160 degrees, carefully remove the brisket and wrap it in butcher paper. This step helps to lock in moisture and flavor. Return the wrapped brisket to the smoker and continue the cooking journey until it reaches an internal temperature of 195 degrees Fahrenheit.
Step 5 - The Resting Spell:
Pull the brisket from the smoker at 195 degrees and wrap it in foil and towels. This cozy bundle then goes into a cooler to rest. This resting period allows the juices to redistribute throughout the brisket, ensuring every slice is moist and flavorful.
Step 6 - Serve and Savor:
