Gougéres (Cheese Puffs)

1 cup water
5 1/2 tbsp butter, unslated, cut into 1/2" cubes
1 cup AP flour
3/4 tsp salt
Pinch nutmeg
Pinch cayenne
4 eggs
2 cups freshly shredded Gruyere cheese
1 tbsp dijon
Freshly shredded parmesan for topping
Instrucciones
Preheat oven to 425F. Lihgly grease 2 trays, then line with parchment paper.
Place water, butter, and salt in a saucepan over med-high heat. Bring to a boil until butter is melted.
Remove from stove, add flour, s&p, and spices. Mix until incorporated.
Return to stove on low heat and mix for 1 min.
Remove from stove, leave for 2 mins.
Add 1 egg, mix until incorporated. Add 3 more eggs, one at a time. Stir in 2 cups cheese and dijon.
Drop 1 tbsp mounds onto trays. Top wtih pinch of parmesan.
Bake for 25 minutes, rotating trays halfway through.
Cool for 15 minutes, serve warm.
