Ingredientes

2 aubergines, cut into chunks

2 courgettes, cut into chunks

2 red onions, cut into chunks

3 red peppers, cut into chunks

6 large ripe tomatoes, quartered

4 cloves garlic, left whole in their skins

4 tbsp balsamic vinegar

4 tbsp honey

2 tbsp dried herbs (oregano & thyme)

Zest and juice of 2 lemons

1 tsp chilli flakes

1 tin chopped tomatoes

Large handful of fresh basil, torn

Good-quality olive oil

Optional:

250ml rosé or red wine (adds extra depth and flavour)

Instrucciones

Preheat the oven to 180°C fan. Line a deep baking tray or roasting dish with parchment.

In a large bowl, toss the vegetables and whole garlic cloves with half the balsamic, half the honey, the lemon zest, and a generous glug of olive oil. Season well with salt and pepper.

Spread onto the tray and roast for 15–20 minutes, until the veg is starting to turn golden.

Remove from the oven, then add the chopped tomatoes, remaining balsamic and honey, lemon juice, chilli flakes, herbs, and wine (if using). Stir through.

Lower the oven to 160°C and return the dish for another 20 minutes, or until the sauce has reduced and the veg is tender.

Finish with torn basil before serving.

Serving suggestion:

Delicious topped with salmon or chicken and a spoonful of cottage cheese. It also makes a brilliant make-ahead side dish for a dinner party—serve alongside roast beef and crispy potatoes.
